…No, I’m not asking about your dating type (or personal description…I don’t know how you word your online dating profile! I will freely admit to knowing absolutely nothing about online dating and what goes on there. I luckily found the yin to my yang (that sounded weirdly dirty, but you know what I’m saying) before […]

….or “After I Got Out From Behind Bars, I Was “Bour-Born” Again” ūüėČ I was so distraught and melancholy at the conclusion of Canada’s 150th dessert month, that there was only one way to drown my sorrows. You guessed it. Bourbon. But how to consume it midday (or early morning for that matter – I […]

….and here they are. Just standing in a row ūüėČ ¬†(and if you don’t get this musical tribute at all, this is where my reference comes from. Although the song was apparently written in 1944, I first heard it in the Lion King movie, so I’m now making you have my own nostalgic trip down […]

I was originally intending to do a Valentine’s post today, but it fell off my radar completely, and though I did bake something today to fit into that theme, you’re just going to have to wait a couple of weeks to see that one (upside though? It’s not something that¬†has to be Valentine’s themed, so […]

Yes, you read that title right, and no, this is not a savoury concoction. The idea for these, as with many baked goods for me, came from all my previous experimentation with aquafaba (aka the brine from canned chickpeas). I got a little overzealous on that front, and many, many cans of chickpeas later, I […]

Mmmm…bite sized brownies. Is there anything more portably delicious? Well…yes, quite a lot of things actually, but who has time to list all of them? Let’s stick to the topic at hand here shall we since I’m obviously talking about brownies today. Two bite brownies have got to be one of the simplest things to […]

These were not intended to be blondies. Not even sort-of. The original intention was to make salted caramel ice cream fudge bars – not like ice cream bars, totally fridge stable and more like regular fudge, but with a base made of one of my more favourite-iest vegan ice creams (the So Delicious Salted Caramel […]

There was no way that I wanted to have this¬†post be about cookies. We’re obviously all looking for a slight change of pace this week after a full month of those deliciously chocolate studded, sugar filled circles of addiction (ummm…does it show that cookies are¬†actually¬†my kyptonite, so I’m totally not sick of them? I figured […]

They say everything’s bigger in Texas, but just because you may in theory¬†want to stuff your face full of a massive, Texas-sized piece of chocolaty decadence, doesn’t mean you always should. Besides, I’m all about the portability of desserts wherever possible (which mostly relates back to the fact that if I make a cake the […]

About Amber

Amber Profile

Hi, I'm Amber Trudeau.  I bake.... a lot.

I'm also vegan, and found that whenever I went out to a restaurant my dessert choices were limited to sorbet, sorbet, and sorbet.  So I started making my own desserts. I wanted them to taste good though - so my ultimatum was to make delicious desserts that also happen to be dairy-free and egg-free. Every week or so, I challenge myself to try something new.  To recreate some kind of traditional dessert that tastes amazing without using animal products.
