P-Oreo Some Sugar on Me

Time this week seemed to slip away from me much faster than usual. Normally I get super excited/ pumped thinking/ pondering what I’m going to whip up each week. In fact, I’m almost more excited at the prospect of what I’m planning than the actual consuming of said dessert and/ or baked good (I said almost people, obviously I don’t really mean that. That would just be crazy talk 😉 ). The next thing I knew, it was Friday and I hadn’t planned anything. Making it doubly-difficult of course was that I couldn’t just make anything since this was Dessert Mashup Month after all.

How to come up with something mashup-y that would also be quick and easy? In particular, I needed something that would not require me to have to go get any special ingredients since my weekend was already jam-packed (and not in the delicious and strawberry-flavoured spreadable way) leaving me limited time for any kind of grocery shopping extravaganza. This task now layed out before me, my brain began to work in overdrive. I fell asleep dreaming of sugarplums dancing in my head with dance partners that consisted of brownies, cinnamon rolls and cookies (those sugarplums really get around 😉 ). Clearly my brain percolated on this all on its own while I was unconscious and drooling onto my pillow (when dreaming of desserts and sugar, this is an unfortunate and embarrassing side effect), as I awoke with the genius solution in hand – Peanut Butter Oreo Popcorn! How much easier can you get?

To be perfectly honest though, I was surprised that the thought of popcorn entered my brain at all. I’m not really the biggest popcorn fan, I mostly feel like you’re eating styrofoam coated in butter and salt (or literally just styrofoam if you’re trying to be all health conscious. Sheesh….eat an apple people. Having popcorn with zero toppings is a completely non-sensical substitution. Something about food that purports to be a delicious snack, but squeaks between my teeth when I eat it kind of creeps me out. But I digress). Not that there’s anything wrong with the butter and salt part mind you 😉 . Particularly if you can somehow take the squeak out, I will freely admit that popcorn is a pretty good vehicle for other toppings due to it’s inherently tasteless nature, hence the reason I was so open to making this (especially since “♪Tiiiiiiime was not on my side. Not it wasn’t! ♪”).

Depending on your level of laziness, you could totally buy instant microwaveable popcorn. Alternatively, you can just pop straight up popcorn kernels via a popcorn maker if you own one, or simply by putting it in a paper bag and popping it in your microwave as you would instant popcorn (who knew right? So simple and obvious once I thought about it, but it just hadn’t crossed my mind before).

Now all that’s left to do is pop in a movie (uh…do people even pop in movies anymore? Or is everything internet/ live streaming/ Netflix now? Whatevs, this popcorn is totally delicious regardless of what era you’re living in), or click on that victrola (which apparently isn’t even considered a word anymore. Thank you spell check), and sail away  on a cloud of gustatory sensory overload.

 

Oreo Peanut Butter Popcorn

Ingredients

  • 1/3 cup popcorn kernels (or you could just use a bag of instant popcorn)
  • 1/3 cup peanut butter
  • 1 tablespoon coconut oil
  • 1/4 teaspoon caramel extract
  • 1/2 teaspoon vanilla
  • 2 tablespoons chocolate chips
  • 8-10 coarsely chopped Oreos
  • sea salt (I used pink Himalayan sea salt, and I can’t recommend it enough, but just use whatever you have on hand)

Directions

1.Place your popcorn kernels in a brown paper bag and roll down the top tightly a few times (as the kernels pop this will start to unravel, so just keep an eye on it in the microwave).

2. Heat in the microwave until there’s 2-3 seconds between kernels popping. This took about 2 minutes in my microwave, but just keep a close watch on it so you don’t burn it.

3. Remove from the microwave and empty popcorn into a large bowl being careful NOT to include any unpopped kernels (unless you really feel that your dentist needs the extra income)

4. In a small saucepan on low heat, combine peanut butter, coconut oil, caramel, vanilla and chocolate chips. Stir constantly until smoothly melted.

5. Remove from heat and pour over popcorn. Stir until all the kernels are coated (it will seem at first like it’s too thick to spread over everything, but just trust me and keep at it for a minute or two).

6.Toss coarsely chopped Oreos on top and stir until distributed throughout.

7. Line a baking sheet with silpat, wax paper or parchment paper and spread the popcorn out on the baking sheet. Sprinkle with sea salt and allow to cool completely (feel free to stick it in the fridge to speed up the process).

8. Enjoy!
