Personally, I’m a big fan of incorporating savoury herbs into dessert (strawberry-basil, lemon-thyme, apple and sage, so many possibilities! I even had a whole themed month about it, so if you’re interested, check out one (or all!) of these posts – rosemary, basil, dill (surprisingly my favourite tasting of the 4) or oregano). In trying […]

Aren’t these pretty? What is it about frosting things in sugar that just give them that deliciously ethereal look? As much as I hate winter, visually it can be pretty stunning. If only real snow were like this though. You know, not actually cold and deliciously sweet? The cupcake version of these really only exist […]

I am super in love with these. I know you probably have just stopped believing me on that front by now because I say it so often it’s lost all meaning. However, I don’t understand what’s not to like here. This week I’m actually incorporating two different condiments. Double the chance for disaster? Of course. But, despite […]

So the secret’s obviously out on which “mystery” condiment we’ll be embracing today. I rub my hands together with relish and glee (after which I had to give them a right scrubbing because my hands were coated in green goo and whatever it is that “glee” is made of? It’s invisible, but surprisingly difficult to […]

Deep Space Wine

December 03 , 2017 by Amber Trudeau - in Brownies, Cake, Cupcakes, Icing

Let’s pretend we’re classy here for a week OK? OK. How do we do that you ask? I think if you douse anything in enough wine (provided you don’t tell anyone it came from a box), only a fool would think it hadn’t become a little more artsy and high brow. Now I know I’ve […]

The final week of single serve! I don’t know what it is about the final week of one of my nonsensical themed months, but they always make me a bit sad 🙁 . It’s amazing how attached one can get to a ridiculous gimmick in such a short span of time. There is no time […]

I am definitely a person who has a not-so-secret love affair with liquid smoke. I don’t know what it is about it, but it makes me swoon rapturously, and I am admittedly pretty heavy handed with it if I’m making soups, stews or chilis (particularly if I won’t be foisting it upon other people. This […]

Death by chocolate, is there really any way to go that sounds sweeter? Maybe drowning in boiling melted chocolate would not be so great due to the whole burning your flesh thing (and also, you’d likely get chocolate up your nose and that just sounds both unpleasant and incredibly wasteful 😉 ). So my book […]

See? Didn’t I promise you no more peanut butter? (well…not no more ever, just not this week. Don’t be crazy 😉 ). I’m a super fan of citrus, so I might be a little biased here (I eat straight lemons (although maybe not? They don’t share their sexuality with me before I devour them 😉 ) […]

About Amber

Amber Profile

Hi, I'm Amber Trudeau.  I bake.... a lot.

I'm also vegan, and found that whenever I went out to a restaurant my dessert choices were limited to sorbet, sorbet, and sorbet.  So I started making my own desserts. I wanted them to taste good though - so my ultimatum was to make delicious desserts that also happen to be dairy-free and egg-free. Every week or so, I challenge myself to try something new.  To recreate some kind of traditional dessert that tastes amazing without using animal products.
